So here I am, finally embracing the World Wide Web, even though I am pretty sure it isn’t called that anymore. I am usually late to the party with most trends, fads, technologies and gossip etc. and as an example of this aforementioned issue is I finally get comfortable with wearing open toed shoes sometime around late August or early September. I also took my first selfie recently, but it was painful and I barely made it through the process which included major sweating and cursing. Selfie’s used to be called pictures or portraits, but whatever. Needless to say this blog is well outside my comfort zone, but people far wiser than myself consider it a necessary evil in this day and age.
Back to why I am really writing this. Years ago I was diagnosed with hypothyroidism and then years after that gluten intolerance. In my late 20’s and early 30’s I was very sick and no doctor could diagnose the reason. I was desperate so I spent hours and hours searching for a cure to my myriad of weird symptoms. I inevitably went down the alternative rabbit hole and was able to cure myself of many of my health issues. I started seeing alternative doctors who didn’t push pharmaceuticals and I have never looked back. This backstory will be discussed in another post. Most recently in March of 2018 I started the keto diet. Since then I have lost 40 pounds, countless inches and have felt happier and healthier than I have in a long time. Sadly with my anti-selfie stance, I failed to take any before or after pictures. Depending on how many complaints I get about this I will post pictures….maybe.
I have been able to find some pretty amazing keto friendly foods online to break up the fatty food monotony (FFM) this past year. I can only eat so many avocado’s before my natural reaction to the color green is to dry heave. Don’t get me wrong, I still like avocado’s, but they are very common in keto recipes and are also easily found here in Southern California, so I use them a lot.

Breakfast’s can also be a challenge. I have found that you can only eat scrambled eggs and omelettes so many times before an avocado seems like a breath of fresh green air. Also if you are trying to get out of the house with a 6 year old in tow who requires 17 reminders to put on socks and shoes, you aren’t always thinking of preparing a nutritious keto breakfast. I have found that having the ProGranola from Julian Bakery and any form of milk alternative you desire on hand at home or work (or both) can definitely help out. I just wish there was some way I could easily prepare for the sock and shoe battle. If anyone has any good ideas, please leave me comments below or start your own blog and I will definitely read any post you write on the sock/shoe battle subject.

One of my favorite cookbooks, especially for great breakfast ideas is “Everyday Ketogenic Kitchen ” by Carolyn Ketchum. I especially adore the Maple Bacon Pancake Muffins which really do taste like pancakes and bacon covered in maple syrup and they shockingly are keto.

For those of you that just cannot imagine life without a treat at the end of the day, there are more and more tasty options available every day. When I was diagnosed with gluten intolerance the only prepared foods available that were gluten free tasted like sand. Now you can get many items that are gluten free in stores that taste as good if not better than their floured counterparts. The more people who are trading in their carbs for fats has similarly pushed the market to have available many more options for the ketogenicly inclined as well. So if you have to have something “sweet”, I recommend Phi Kind for all your dessert needs. I will caution you that you need to be prepared for the sticker shock on these keto treats. As is often the case, the healthiest and the tastiest items do in fact cost more than your grocery store Snickers.
In a future post I will discuss why I decided to go keto and what my experiences have been with it thus far. Stay tuned. If you have any ideas for a future blog post or have questions or complaints about my verb choice or punctuation, please feel free to leave your comments below.
Cheers!
